I apologies if this question has already been asked (as it seems like a basic question; ) however, I'd like to recolor the hair on the red headed male sim's head (with the glasses) and can't seem to find his head amongst the other heads and skins.

You will need to look in the .far files in your game folders. To do this you will need a .far editing program, such as FarOut from Paladin's Place. The heads and skins from the base game will be located in the Textures.far, then the others will be in the corresponding expansion .far files.
